Baked Cajun Pork

A very easy and simple weeknight-style meal, made from scratch. I also make a variation of this recipe with a potent Indian-style flavor.

  1. Chop the veggies (I like to slice the onions into thick rings).
  2. In a large baking tray, lay down veggies as a bed.
  3. Into a large bowl, mix together liquid smoke, Worcestershire sauce, and Cajun seasoning.
  4. One at a time, marinade the pork cuts in the bowl, then place them over the veggie bed.
  5. Place in an oven for a minimum of 60 minutes at 350° F. Cook longer and hotter if desired (I usually cook for 75 minutes at 400° F, which makes the pork slightly crispy).
