This is a recipe that I came up with. I had some leftover rice one day and wanted something meaty, spicy, and flavorful to throw on top. I have already made this several times before writing it down.
The result was very dense and filling, and was very nice as leftovers for several days after. The name ‘Pollo Sabrosa’ is Spanish for ‘Tasty Chicken’.
The following recipe is based on my memory. It probably isn’t exactly right, but this is simple enough that it shouldn’t make a huge difference.
Ingredients
- 🐔 2 lbs ground chicken
- 🐔 1 lbs boneless chicken breast or thigh
- 🐔 2 cup chicken broth
- 🫑 2 Bell Pepper, chopped
- 🌶️ 3 jalepeno peppers, chopped
- 🧅 2 large onions, chopped
- 🧅 1 garlic bulb, chopped
- 🌶️ 250 g chili powder (at least 1 packet, depending on the brand)
- 🚬 2 tbsp liquid smoke
- 🌿 2 tbsp black pepper
- 🍀 2 tbsp oregano
- 🌱 2 tbsp red pepper flake
Instructions
- Saute onion and garlic in a large stove-top pot.
- Cut whole chicken cuts into medium-sized chunks, then add them to pot. Add ground chicken as well.
- Add peppers, liquid smoke, and broth. Then stir on medium-high heat until mostly cooked.
- Add dry spices. Continue to stir on medium heat until done.
