A standalone recipe for a chicken-based meat filling, spiced with Jollof Seasoning. This can be paired with The Jollof Baked Rice, or served on its own with another carb (such as pita bread).
Ingredients
- 🌿 4 tbsp [[jollof-seasoning|Jollof Seasoning]]
- 🚬 1 tbsp Liquid Smoke
- ☘️ 1 tbsp Cinnamon
- 🥝 4 tbsp Tamarind Paste
- 🍅 2 tomatoes (chopped)
- 🧄 1 bulb Garlic (chopped)
- 🧅 2 onions (chopped)
- 🐔 3 lbs boneless chicken (chopped or ground)
Instructions
- Mix chicken, onion, garlic in a large pot. Begin cooking on stove-top using med-high heat.
- Add tomatoes, tamarind paste, and all spices. Continue stir regularly. Cook on med heat until done.
- Serve with a complementary carb: such as rice, or flatbread.
