I only tried this recipe once. It turned out nice, but it wasnโ€™t interesting enough for me to try it again.

Ingredients

  • ๐Ÿฎ 1 cup (237 mL) milk or water
  • ๐Ÿซ 1/2 cup (118 mL) molasses
  • ๐Ÿฏ 1/2 cup (118 mL) honey
  • ๐Ÿงˆ 1/2 cup (one stick, 113g) butter
  • ๐Ÿง‚ 1/2 cup (100g) granulated sugar
  • ๐Ÿฅš 1 egg
  • ๐Ÿž 2 1/2 cups (300g) all-purpose flour
  • ๐Ÿง‚ 1/2 teaspoon salt (maybe 3/4 if using unsalted butter)
  • ๐Ÿง‘โ€๐Ÿณ 1 1/2 teaspoons baking soda
  • ๐ŸŒฟ 2 tablespoons ground cinnamon
  • ๐Ÿซš 2 tablespoons ground ginger (use half if you donโ€™t want it very spicy)
  • โ˜˜๏ธ a little finely-ground black pepper

Instructions

  1. Heat oven to 350ยบF/180ยบC.
  2. Prepare a loaf pan with grease or parchment sling.
  3. Pour milk/water into a bowl, along with the molasses and honey.
  4. Drop in the butter in chucks. Microwave until butter is mostly melted.
  5. Put the flour in a mixing bowl with the salt, baking powder, and spices. Whisk to combine and fluff up the flour.
  6. Add the sugar to the wet ingredients along with the egg and stir. Pour the wet ingredients into the dry and whisk until smooth.
  7. Pour mixture into the loaf pan and bake for 1 hour.
