A very easy and simple weeknight-style meal, made from scratch. While not traditional by any means, it achieves a very good indian-style flavor. This is a variation of my [[baked-cajun-pork|Cajun Pork]] recipe.

Ingredients

  • 🐖 2 - 3lbs of your preferred cuts of pork (1 or 2 grocery store packages)
  • 🫙 1/3 cup liquid smoke
  • 🫙 2/3 cup worchestshire sauce
  • 🌿 3-4 tbsp Curry powder
  • ☘️ 1-2 tbsp Garam Masala (optional, could be substituted for cumin)
  • 🧅 1 - 2 medium sized onions, or other miscellaneous veggies

Instructions

  1. Chop the veggies (I like to slice the onions into thick rings).
  2. In a large baking tray, lay down veggies as a bed.
  3. Into a large bowl, mix together liquid smoke, worcheshire sauce, and dry spices.
  4. One at a time, marinade the pork cuts in the bowl, then place them over the veggie bed.
  5. Place in an oven for a minimum of 60 minutes at 350° F. Cook longer and hotter if desired (I usually cook for 75 minutes at 400° F, which makes the pork slightly crispy).
